Adventures with Swiss Chard

We planted our first veggie garden this year and although we have never eaten it, we planted six Swiss chard plants. This recipe is our second stab at creating a Swiss chard recipe everyone will eat as a side dish. I was reading earlier this week kids need to taste something 14 times before they may like it. I have committed to making sure the kids eat a bite of Swiss chard at least 14 times. We certainly have enough of it growing in the yard to make that an easy task! This recipe tuned out to be a better version for the kids than the first version with soy sauce, chili flakes and seasoned rice vinegar.

1 bunch of Swiss chard, stems removed and chopped, leaves roughly chopped
1 small onion, chopped 
pinch of salt
1 clove of garlic, minced
1/4 cup white wine
juice from half a lemon
2-3 tbsp. grated Parmesan cheese

Chop onion and chard stems and add to sauté pan with a couple teaspoons of olive oil and salt to taste. Cook on medium-high until onion begins to soften, a few minutes at most. Add 1/4 cup of wine and reduce. When wine has almost evaporated add chard leaves and cook until wilted. Turn off heat and drizzle with lemon juice and sprinkle with grated Parmesan cheese.
