Chicken Lettuce Wraps


1 lb. ground chicken
3 cloves garlic, minced
2 tsp. ginger, minced
3 stalks of celery, finely chopped
1 medium onion, chopped
3 carrots, finely chopped
1 red pepper, finely chopped

Cooking Sauce:
1 tbsp. hoisin sauce
1 tbsp. soy sauce
2 tbsp. dry sherry
2 tbsp. oyster sauce
2 tbsp. water
1 tsp. white sugar
2 tsp. cornstarch

2 heads romaine lettuce

Sauté onion, celery, carrots, ginger and garlic until softened. Add ground chicken, break up ground chicken while it cooks. Add red pepper, cook until softened. Add cooking sauce and stir until thickened. Serve in romaine lettuce cups.
